Cowboy Caviar Salad Recipe
Cowboy caviar salad a festive and delicious mixture of beans, corn, bell peppers, jalapeños, onions, and cilantro. Makes a great side for Spanish dinners or summer barbecues. No forks required. Just add chips!

Instructions
  1. Combine all salad ingredients in a large bowl.
 To make the dressing, combine all of the remaining ingredients except for the olive oil. While whisking, slowly pour in olive oil while whisking constantly. Continue to whisk until fully emulsified. Add to salad, and toss to coat. 
Serve immediately or refrigerate to serve later. If you want to make ahead, don’t add avocado until you’re ready to serve. Makes a great salad in its own or serve with tortilla chips. Enjoy!
