Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup almond milk
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, combine almond milk, maple syrup, melted coconut oil, orange juice, orange zest, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes
