Ingredients

For the Homemade Pizza Dough:
  • - 1 1/2 cups warm water
  • - 1 tablespoon sugar
  • - 2 1/4 teaspoons active dry yeast 1 packet
  • - 4 cups all-purpose flour
  • - 2 tablespoons olive oil
  • - 1 teaspoon salt
For the Vegan Pesto:
  • - 2 cups fresh basil leaves packed
  • - 1/4 cup pine nuts
  • - 3 cloves garlic
  • - 1/4 cup nutritional yeast
  • - 1/2 cup extra virgin olive oil
  • - Salt and pepper to taste
For Toppings:
  • - 1 cup cherry tomatoes halved
  • - 1/2 cup sliced black olives
  • - 1/4 cup sliced red onion
  • - 1 cup vegan mozzarella cheese shredded
  • - Fresh basil leaves for garnish

Method

Prepare the Pizza Dough:
  1. - In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. - In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. - Stir until a rough dough forms, then turn out onto a lightly floured surface. Knead the dough for about 5-7 minutes until smooth and elastic.
  4. - Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Make the Vegan Pesto:
  1. - In a food processor, combine basil leaves, pine nuts, garlic, and nutritional yeast. Pulse until finely chopped.
  2. - With the processor running, gradually add olive oil until the mixture is smooth and well combined. Season with salt and pepper to taste.
  3. Preheat the oven to 450°F (230°C). Punch down the risen dough and divide it into two equal portions. Roll out each portion into a thin round crust on a lightly floured surface.
Assemble the Pizza:
  1. - Spread a generous layer of vegan pesto over each pizza crust, leaving a small border around the edges.
  2. - Top with cherry tomatoes, sliced black olives, red onion, and vegan mozzarella cheese.
  3. - Transfer the pizzas to a baking sheet or pizza stone lined with parchment paper.
  4. Bake the Pizzas:
  5. - Place the pizzas in the preheated oven and bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Serve and Enjoy:
  1. - Remove the pizzas from the oven and let them cool for a few minutes before slicing.
  2. - Garnish with fresh basil leaves and an extra drizzle of pesto, if desired.
  3. - Serve hot and enjoy the burst of flavors in every bite of this delightful Vegan Pesto Pizza!
