  1. Clean the Chicken of the Woods mushrooms thoroughly and trim off any tough parts. Cut them into large, bite-sized pieces that will be easy to grill.
  2. In a mixing bowl, combine olive oil, tamari or soy sauce, lime juice, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Stir well to make a marinade.
  3. Place the mushroom pieces in a shallow dish or a resealable bag and pour the marinade over them. Ensure all the mushrooms are well coated. Marinate in the refrigerator for at least 30 minutes, allowing the flavors to meld together.
  4. Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are evenly distributed and have turned gray.
  5. Remove the marinated mushroom pieces from the dish or bag, allowing any excess marinade to drip off. Reserve the remaining marinade for basting.
  6. Place the mushroom pieces on the grill, arranging them in a single layer. Grill for about 4-6 minutes on each side, or until the mushrooms are tender and slightly charred. Baste with the reserved marinade occasionally during grilling to enhance the flavor.
  7. Once cooked, remove the grilled mushrooms from the heat and transfer them to a serving platter. Garnish with fresh cilantro, if desired.
  8. Serve the Grilled "Polo Asado" Chicken of the Woods Mushrooms hot with lime wedges on the side for squeezing over the mushrooms, adding a bright citrusy touch.

  1. Preheat your oven to 350 degrees.
  2. Next mix the ground flaxseed and water together. This will be your flax egg. For instructions on how to make flax eggs please see my video tutorial. Once you finished mixing the flax, set the ingredients aside until needed.
  3. Now it’s time to combine our dry ingredients by mixing the flour, cornstarch, baking soda, and salt into a large bowl or mixer. Once the dry ingredients is mixed we will add softened vegan butter.
  4. Continue mixing while adding the following ingredients of brown sugar, vanilla, and flax egg mixture. After those steps are finished add 1/2 cup of flour and mix until smooth. Once everything looks consistently mixed, we will slowly add in our chocolate chips and optional nuts. Continue mixing these ingredients until everything is combine.
  5. Now that all of the ingredients is mixed together we are ready to spoon the cookie dough into balls onto a cookie sheet.
  6. Start by Line your cookie sheets with parchment paper.
  7. Grab a kitchen spoon to use for shaping your cookie dough. I normally like to use one or two tablespoons each to make small round cookie dough balls. Next let’s place our cookie dough balls 2 inches apart across our baking sheet.
  8. Now let's start baking them in the oven. We will bake our cookies for about 10 minutes or less. Make sure to check your cookies while they are baking to see if they are lightly golden around the edges. If so, it’s time to remove them from the oven. Let the cookies cool on the cookie sheet for about 5 minutes, then transfer the cookies to a cooling rack.
  9. Enjoy!

Optional Ingredients: If you are not allergic to them, I like to use raw nuts in my cookies. I enjoy using pecans or walnuts lightly chopped. Add them in with the chocolate chips when you start mixing.

Ingredients:

– 1 can of canned peas, drained and rinsed
– 2 medium-sized carrots, peeled and boiled until tender
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh parsley, chopped
– 2 tablespoons olive oil
– 1 tablespoon apple cider vinegar
– Salt and pepper to taste

Instructions:

1. In a mixing bowl, combine the drained peas, boiled and diced carrots, chopped red onion, and fresh parsley.

2. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper to create the dressing.

3. Pour the dressing over the salad ingredients and gently toss until everything is well coated.

4. Taste and adjust seasoning if needed.

5. Refrigerate for at least 30 minutes to allow the flavors to meld.

6. Serve chilled and enjoy your refreshing vegan pea and carrot salad!
