Vegan Orange Zest Muffins
Ingredients
- 2 cups all-purpose flour
- 1 cup almond milk
- 1/2 cup maple syrup
- 1/4 cup coconut oil melted
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh orange juice
- Zest of 2 oranges
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, combine almond milk, maple syrup, melted coconut oil, orange juice, orange zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
