- 1 tablespoon ground flaxseed
- 2.5 tablespoons water
- 1/2 cup earth balance vegan butter softened to room temperature, 8 tablespoons
- 1 1/4 cups brown sugar
- 2 teaspoons pure vanilla extract
- 1 1/2 cups all purpose flour plus more if needed
- 2 teaspoons cornstarch or tapioca starch
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cup non dairy semi sweet chocolate chips

- Preheat your oven to 350 degrees.
- Next mix the ground flaxseed and water together. This will be your flax egg. For instructions on how to make flax eggs please see my video tutorial. Once you finished mixing the flax, set the ingredients aside until needed.
- Now it’s time to combine our dry ingredients by mixing the flour, cornstarch, baking soda, and salt into a large bowl or mixer. Once the dry ingredients is mixed we will add softened vegan butter.
- Continue mixing while adding the following ingredients of brown sugar, vanilla, and flax egg mixture. After those steps are finished add 1/2 cup of flour and mix until smooth. Once everything looks consistently mixed, we will slowly add in our chocolate chips and optional nuts. Continue mixing these ingredients until everything is combine.
- Now that all of the ingredients is mixed together we are ready to spoon the cookie dough into balls onto a cookie sheet.
- Start by Line your cookie sheets with parchment paper.
- Grab a kitchen spoon to use for shaping your cookie dough. I normally like to use one or two tablespoons each to make small round cookie dough balls. Next let’s place our cookie dough balls 2 inches apart across our baking sheet.
- Now let's start baking them in the oven. We will bake our cookies for about 10 minutes or less. Make sure to check your cookies while they are baking to see if they are lightly golden around the edges. If so, it’s time to remove them from the oven. Let the cookies cool on the cookie sheet for about 5 minutes, then transfer the cookies to a cooling rack.

Optional Ingredients: If you are not allergic to them, I like to use raw nuts in my cookies. I enjoy using pecans or walnuts lightly chopped. Add them in with the chocolate chips when you start mixing.
