Stuffed Roasted Vegetables Vegan Holiday Feast Dinner Ideas

A wonderful Vegan Holiday Feast vegan dinner starting with roasted stuffed acorn squash, silky mashed potatoes, gravy and sautéed brussels sprouts. I also enjoy adding homemade cranberry sauce for a splash of bright color and wonderful traditional flavors. For this dish I decided to leave out the holiday vegan roast and only serve it with roasted vegetables and homemade cranberry sauce. Yum!

The entire family enjoyed this satisfying meal and loved that they still had room for the warm vegan pumpkin pie that was served for dessert!
