- 1 Avocado Large Cubed
- 1 Red Bell Pepper Diced
- 1/2 Red Onion Medium Diced
- 1/4 Cup Green chives or cilantro Chopped
- 1-2 Jalapeños Diced
- 2 Tomatoes Diced & Remove Seeds
- 1 Can Black Beans Drained
- 1 Can Black Eyed Peas Drained
- 1 Can Corn Drained
- 1 Can Black Olives Drained & Sliced
- 1/4 Cup Lime Juice Fresh Squeezed
- 1 Tablespoon maple syrup
- 1 1/2 Teaspoon Cumin Powder
- 1 1/2 Teaspoon Chili Pepper Powder
- sea salt To Taste
- black pepper To Taste
- 1/3 Cup olive oil Whisked In

- Combine all salad ingredients in a large bowl. To make the dressing, combine all of the remaining ingredients except for the olive oil. While whisking, slowly pour in olive oil while whisking constantly. Continue to whisk until fully emulsified. Add to salad, and toss to coat. Serve immediately or refrigerate to serve later. If you want to make ahead, don’t add avocado until you're ready to serve. Makes a great salad in its own or serve with tortilla chips. Enjoy!
