Today, I’m rustling up a zesty Homemade Achiote Paste that'll add a burst of flavor to your vegan Mexican dishes. I use this sauce as a marinade on plant- based meats, mushrooms, rice and more. Saddle up and let's get cookin'!

Instructions
  1. Heat a dry skillet over medium heat and add the achiote seeds, cumin seeds, coriander seeds, and black peppercorns. Toast the spices for about 2-3 minutes, stirring occasionally, until they become fragrant. Remove from heat and let them cool.
  2. In a blender or food processor, add the cooled toasted spices, garlic cloves, red onion, tomato paste, apple cider vinegar, orange juice, lime juice, maple syrup, dried oregano, smoked paprika, and sea salt.
  3. Blend or process the mixture until smooth and well combined. If needed, scrape down the sides of the blender or processor and continue blending until you achieve a thick, paste-like consistency.
  4. Once the achiote paste is ready, transfer it to a glass jar or airtight container. It can be stored in the refrigerator for up to two weeks, allowing the flavors to meld together.

Note: Achiote seeds, also known as annatto seeds, can usually be found in the spice aisle of well-stocked grocery stores or specialty spice shops

  1. Preheat your oven to 350 degrees.
  2. Next mix the ground flaxseed and water together. This will be your flax egg. For instructions on how to make flax eggs please see my video tutorial. Once you finished mixing the flax, set the ingredients aside until needed.
  3. Now it’s time to combine our dry ingredients by mixing the flour, cornstarch, baking soda, and salt into a large bowl or mixer. Once the dry ingredients is mixed we will add softened vegan butter.
  4. Continue mixing while adding the following ingredients of brown sugar, vanilla, and flax egg mixture. After those steps are finished add 1/2 cup of flour and mix until smooth. Once everything looks consistently mixed, we will slowly add in our chocolate chips and optional nuts. Continue mixing these ingredients until everything is combine.
  5. Now that all of the ingredients is mixed together we are ready to spoon the cookie dough into balls onto a cookie sheet.
  6. Start by Line your cookie sheets with parchment paper.
  7. Grab a kitchen spoon to use for shaping your cookie dough. I normally like to use one or two tablespoons each to make small round cookie dough balls. Next let’s place our cookie dough balls 2 inches apart across our baking sheet.
  8. Now let's start baking them in the oven. We will bake our cookies for about 10 minutes or less. Make sure to check your cookies while they are baking to see if they are lightly golden around the edges. If so, it’s time to remove them from the oven. Let the cookies cool on the cookie sheet for about 5 minutes, then transfer the cookies to a cooling rack.
  9. Enjoy!

Optional Ingredients: If you are not allergic to them, I like to use raw nuts in my cookies. I enjoy using pecans or walnuts lightly chopped. Add them in with the chocolate chips when you start mixing.
