Vegan Molasses Chew Cookies

Ingredients:


– 1 cup all-purpose flour
– 1 cup whole wheat flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground ginger
– 1 teaspoon ground cinnamon
– 1/2 cup vegan butter, softened
– 1/2 cup molasses
– 1/2 cup brown sugar, packed
– 1/4 cup maple syrup
– 1 teaspoon vanilla extract
– 1/2 cup non-dairy milk (e.g., almond, soy, or oat)

Instructions:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, ground ginger, and ground cinnamon. Set aside.

3. In a large mixing bowl, cream together the softened vegan butter, brown sugar, and molasses until well combined.

4. Add the maple syrup and vanilla extract to the butter-sugar mixture, and beat until smooth.

5. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.

  • – 2 cups fresh basil leaves packed
  • – 1/4 cup pine nuts

  • – 1/2 cup sliced black olives

Method
